Good pasta

Amici, I am participating in a “pasta night” and so I am looking for some quality pasta, with a preference for a ravioli, tortellini, or spaghetti. I don’t mind if its frozen, if that isn’t sacrilege(?). Any recommendations? and where to get it in Sydney? Migliori saluti

Seek out an Italian deli that sells the stuff fresh. That’s the best stuff I’ve tried. Otherwise, go the Latina – it’s not bad at all. Col

Piacere. Your average fruit and veg store will stock some sort of home-made variety. We get the odd packet from Panetta’s fruits (Gladesville), and Harris Farm also supply some good stuff. But I think the best place you can go to get some real, home made stuff would be Haberfield. Go for a walk down Ramsay Rd and take in the shops – there’s a cheese shop, pastry and and a pasta store within the same block or so. All great stuff. Then again, I’ve got a freezer full of homemade gnocchi and tortellini from the in-laws ;) Ciao!

Just make it. A pasta machine can be had <$50, it takes about two hours for a huge batch and the effort will be appreciated. Make a dough of flour and eggs, knead it and let it rest for an hour. While it’s resting, cook your filling. After the hour, roll out the dough thru the pasta machine, place the filling in little balls on a sheet of the rolled pasta, lay another sheet over the top and cut out your shapes. Tastes better than any bought stuff.
